A recent move by a high-end sushi restaurant to prohibit tipping is raising discussion as to whether the practice could catch on. At a time when dining establishments have come under scrutiny for the way tip money is split, some believe eliminating tips may be the simplest way to avoid possible legal repercussions.
The habit of tipping may be hard to break, says Carolyn Richmond, a noted hospitality attorney in New York. “Even if you changed the server’s mentality toward how they are compensated, it is almost impossible to rewire the American customer who thinks they have to leave ‘something’ at the end of the meal,” said Richmond.
